My first Kouglof.


Here is one of my favorite recipe, it is a speciality from the Alsace region (North East of France). A delicious cake, perfect with a coffee... Hope you'll enjoy it as much as we do. 


Prep time : 35 minutes
Cooking time : 50 minutes; 240 degrees
Price : €€€€





Ingredients: 

500 g flour
70 g sugar
10 g salt
150 g butter
20 cl milk
2 big eggs
25 g baker's yeast
70 g raisins
30 g almonds



Preparation:

1) Mix the baker's yeast with half of the milk and a tablespoon of flour. Let it rest for 30 minutes at room temperature. 

2) Now, mix the flour, the two eggs, the salt and what's left of the milk. Knead the pastry for fifteen minutes with your hands!  The pastry has to be detached from the recipient. 

3) Add then the tendered butter and knead again until it's well incorporated.

 Keep it up, it's a good workout for your arms ;)  



4) Add the baker's yeast mixture to the pastry and .. wait for it... knead again to get a homogenous dough. 

5) When the dough is detached from the recipient, let it rest for 1h30 at room temperature.

If you want your dough to raise properly, let it in a room where the temperature is not too cold.

6) After an hour and a half, add the raisins to the dough. 

7) Grease a Kouglof tin with butter and put the almonds at the bottom. Then add the preperation. 




8) Put it in the oven for 50 minutes at 240 degrees. If it glazes too much, cover with a foil.
