Classic cheese soufflé_French recipe


Prep time: 15 minutes
Cooking time: 45 minutes at 180 degrees
Price: €€€€€

Ingredients:

150 g grated cheese
40 g butter
2 glasses of milk
3 tablespoons flour
5 eggs
salt and pepper



Preperation:


1) Grate the cheese yourself, it's always cheaper and it tastes better ;) 


2) Prepare the béchamel sauce. Melt the butter and add the flour. Mix it with a whisk. Then add the warmed milk progressively. Stir vigourously not to have lumps. Season with salt and pepper. 




3) Turn the heat off and add the yolks. Don't stop stirring so that the yolks don't cook. 


4) Beat the white eggs until stiff. Turn the pot around, if they stick, you did a good job!


5) Add the grated cheese to the béchamel sauce. 


6) Add the white eggs slowly and delicately with a wooden spatula.


7) Grease a dish with butter and spread the preparation. 


8) Put it in the oven at 180 degrees for 45 minutes. 

My mum's secret: don't open the oven while the soufflé is cooking. 
You'll get a better result to impress your guests ;) 


9) You can eat the soufflé with a mixed salad for example.
