Mediterranean soup


Prep time: 20 minutes
Cooking time: 1h

Ingredients: 

2 red peppers
1 brocoli 
2 zucchinis
3 potatoes
1 big onion 
4 cloves of garlic
1vegetable broth
herbs de provence
salt and pepper


And the liquids: 

1 tablespoon olive oil
1/2 L water 
400 g tomato paste


Preparation:

1) Boil some water and cook the brocoli for 7/8 minutes. Prick it with a knife to check it.





2) Keep it on a plate. Peel, cut and cook the potatoes which will be added just before serving. 

3) Prepare the vegetable: 

Wash them all. Remove the pips from the peppers and slice them thinly. Cut the zucchinis in halves and then in small cubes. Slice onion and garlic. 







4) Brown the onion and garlic in a tablespoon of olive oil. 


5) Add the pepper and a bit of water, cover and stir from time to time. 


6) After 5/6 minutes, add the zucchinis and a glass of water. Cover and let it cook for 5 minutes. 


6) Then add the rest of the water and the tomato paste. 


7) Add the broth. 


8) Season with the herbes de Provence.  


9) Add salt and pepper. 


11) Cover and let it cook for 30 minutes. Before serving, add the brocoli and potatoes to heat them.
