Stewed apples




Prep' time: 10 minutes
Cooking time: from 15 to 30 minutes, depending on the types of apples. 
Price: €€€€

Ingredients:

1 kilo apples
100 g sugar
1 lemon juice
1 glass of water
1 pinch cinnamon 



Preparation: 

1) Peal the apples. 


2) Cut them in small cubes (it will reduce the cooking time), add the lemon juice. 



3) While cooking at low heat, add a bit of water to prevent it of burning.

4) Finally, add sugar (if needed) and cinnamon according to your own taste.

My first Kouglof.


Here is one of my favorite recipe, it is a speciality from the Alsace region (North East of France). A delicious cake, perfect with a coffee... Hope you'll enjoy it as much as we do. 


Prep time : 35 minutes
Cooking time : 50 minutes; 240 degrees

Ingredients: 

500 g flour
70 g sugar
10 g salt
150 g butter
20 cl milk
2 big eggs
25 g baker's yeast
70 g raisins
30 g almonds



Preparation:

1) Mix the baker's yeast with half of the milk and a tablespoon of flour. Let it rest for 30 minutes at room temperature. 

2) Now, mix the flour, the two eggs, the salt and what's left of the milk. Knead the pastry for fifteen minutes with your hands!  The pastry has to be detached from the recipient. 

3) Add then the tendered butter and knead again until it's well incorporated.

 Keep it up, it's a good workout for your arms ;)  



4) Add the baker's yeast mixture to the pastry and .. wait for it... knead again to get a homogenous dough. 

5) When the dough is detached from the recipient, let it rest for 1h30 at room temperature.

If you want your dough to raise properly, let it in a room where the temperature is not too cold.

6) After an hour and a half, add the raisins to the dough. 

7) Grease a Kouglof tin with butter and put the almonds at the bottom. Then add the preperation. 




8) Put it in the oven for 50 minutes at 240 degrees. If it glazes too much, cover with a foil.

Raspberry mousse recipe


Prep time: 15 minutes
Cooking time: 0

Ingredients: 


300 g raspberry
5 small eggs or 4 big ones
150 g fromage frais or 2 natural yoghurts 
60 g sugar





Preparation: 


1) Mix the fruits in a blender and sieve them to get rid of any pips. 


2) Add the yoghurt, 50g of sugar and the yolks and mix again. 




3) Beat egg whites until stiff and add a tablespoon of sugar when they are almost ready. 




4) Add the white eggs to the rest of the preparation delicately with a wooden spatula. 









6) Spread the mousse in small bowls and put them in the fridge for at least 5 hours. 




7) Add a few fresh fruits on the top before serving.

Chocolate cake.. everyone is going to love it!


Remark: the photos of this article are adapted to cook 2 cakes...

Prep time: 15 minutes
Cooking time: 35 minutes

Ingredients: To prepare this smooth cake, you need: 

4 eggs
1/2 cup butter (125g)
1/2 cup flour (125g)
1 cup black chocolate (200g)
1/2 cup sugar (140g)
1/2 a packet of baking powder




Preparation:

1) Sift the flour as shown on the photo.



2) Add the baking powder. 


3) In a small pot, melt the chocolate slowly. When melted, remove from the heat and add the butter. Stir to obtain a smooth texture. 


4) Prepare the eggs: separate the white eggs from the yolk. Add the sugar to the yolks and whiten the preparation with a hand mixer. 

5) Mix the preparation "chocolate / butter" to the flour. Then add the mixture "yolks / sugar". Stir with a wooden spatula until the preparation becomes smooth. 


6) Beat the whites until stiff. Add them delicately to the preparation with a wooden spatula. 

If you turn the pot over and the whites stick to it, they are ferm enough!they don't fall ;)


7) Grease the tin with butter. Spread the preparation and put it in the oven at 180 degrees for 35 minutes. 
Prick the cake with a knife, when it's almost dry, the cake is ready to be eaten. 




You can also sprinkle the cake with icing sugar. 
Serve it with some vanilla ice cream and red fruits coulis.
