Light stuffed vegetable

Preparation time: 15 minutes
Cooking time: 35 minutes

Ingredients: 3 persons

1 zucchini
1 aubergine
1 green pepper
2 small onions or a big one
4 clove of garlic
1/2 cup grated cheese
1/2 cup smoked bacon
3 tablespoons of tomato sauce
olive oil
herbes de Provence (thyme, basil...)
salt and pepper





Preparation: 

1) Clean the vegetable (zucchini, aubergine, pepper).

2) Cut them in two pieces, empty the flesh and put it aside. Put the veg' in a dish, pour a bit of olive oil on them and pour a glass of water into the dish. Put it in the oven at 180 degrees for 20 minutes.

3) Meanwhile, slice thinly the onions and the garlic and fry them on a saucepan with a tablespoon of olive oil. 



4) When they are soft, add the bacon and cook it for 3/4 minutes.  


5) Then add the tomato cut in small cubes.


6) Add the flesh of the vegetable cut in small cubes.  


7) Finally, add the 3 tablespoons of tomato sauce.  


8) Season the preparation according to you own taste. For example, add salt, pepper and herbes de Provence.


9) Spread the preparation on the vegetable and cover them with grated cheese (if you grate it yourself, it is usually cheaper ;) )


10) Put the dish in the oven at 180 degrees for 20 minutes. To be sure it is ready, prick the veg' with a knife, if it is soft, they are ready.

Advice: you can also add mushrooms to the preparation, or add whatever you like :)
